The lower edge on a fry pan makes it easy to lift out eggs and meat. And if your oven is large enough use a fry pan for tart tatin. Delicious. If you like a higher edge on your fry pan you might want to consider a sauté pan. AND 32 cm fry pans have an additional small handle for easier lifting. Don’t forget to add a perfectly fitting cover to your new fry pan.

Perfect heat distribution
i bought this pan because I wanted a copper pan and I needed something smaller than 12 inches. This pan conducts heat excellently and cleans up beautifully. It’s a pleasure to use.

24cm pan can hold up to 4 eggs, 1 big ribeye steak, or portions for up to 2.6 people. By .6 i mean 2 typical adult portions + 1 smaller portion, and the pan would still be spacious enough during cooking. It is the perfect size for like 500g of ground beef, but i found it difficult to stir 1000g of ground meat. I use this pan a lot, it is solid, weighted just about right to move around or do some tossing. If i go with the 28cm, it would probably be too big, but I am getting the 28cm sauté for larger portion for my ragu Bolognese searing.
